Yum @mkksemail - wondering what you mean Monday 'ci'?

Shopping score of the weekend was mangos, so fresh to enjoy and will freeze up the extra after I get them ripened a bit. Pups were rock hard.

Yes it does look fresh and delish, yakky!!

Wednesday ci! I had a Hogwarts challenge that included making food from Great Britain, so I made Beans on Toast :p. (I love Beans! and srsly, guys, Trader Joe's has killer bread. So. Damn. Good.) I added (olive-oil) fried (charred, like I like 'em!) diced tomatoes, and eggs. UK says 1 serving of Beans counts for 1 of the Five a Day :D. The diced tomatoes def count!

Will be having a green juice and nuts later, too.

Oh, added an additional 'Sweet Greens' juice for a late night snack, last night, too.

    Hi Greenie Team!

I was out of town for funeral and celebration of life for a beautiful matriarch this past weekend. Back yesterday, but wiped out today! I did get some freg in while gone - but I was in NY so I also fit in some NY pizza and bagel in, too! (ofc ;-) )

Celery juice on deck today, so far (Raw generation, Morning Celery Juice -celery,lemon). We'll see about dinner. Will make sure there's some freg in the mix. Xx

    Loving those pix, yakky!!!

Watched Julia Child episode - Idea - Imagine. Imagine this as a bowl of liver pate. Saute onions and garnish top of bowl along edge with a ring of saute onions.

Could use that in so many ways - over anything dense - with hummus, refried beans, chili, stew. With other vegs included such as peppers, a mire poix or sofrito - pretty and tasty in my imagination. Drooling! lol

Sharing my Freggie Focus / Annual physical & 6-mo checkup & labs victory - thank you, Greenie Team!!

I had my annual physical today. Doc is very pleased with improvements in labs, from focusing on freggies. A1C now normal, chol now normal, metabolic panel looks great, TSH normal, too. Triglycerides just above normal. I've never had a Triglycerides high reading until last Nov. Eight days post-covid infection, they were double the previous 125s. Somewhere in the 250s. This one was 166 (high threshold is 150). She didn't seem too worried. Next labs in a yr, instead of 6 mos 👍.

Now I just have to marry my freggie focus to trying to stay inside calories again. I stopped worrying about calories while I was focusing on quality of food intake.

Doc said you can be healthier while or heavy if your food quality is high, than you are if you're normal weight and your food quality is low - and my labs are telling the story of focusing on freggies all fall and winter, she said! Yay :)

Thanks, yakky! I'm very proud of my accomplishment. She wanted to put me in statins last May! I had follow-up labs & checkup last Nov. A1C was down then, from 5.8, to 5.7. But not normal yet (5.6 is the threshold). I did stabilize chol by Nov. A1C joined it today. And she was very pleased with the he metabolic panel, too! :)

Sorry, my text wasn't clear - in Nov, the chol had normalized, the A1C came down a pt, but not yet normal. This week (May), the chol was down further (so, still normal), and the A1C came down 4 more pts, putting me 3 pts into the normal zone! :) So, I normalized both!

Also, Thursday (so far!) ci ~ banana, and hazelnuts. Really need to bank some green today if I'm going to make my Hogwarts Unbreakable Vow of 4x/wk for green freggie servings!

oooooo, I really wanna reserve a table at your restaurant, yakky ;-) !!

    Saturday ci ~

Stopped at Trader Joe's after my Planet Fitness workout again (got 2 in this week! yay!) - 2 weights circuits (lower, and upper/core), and an indoor cycling ride (8+ miles on Saturday, to make up for the ~3.5 cut short ride on Wed; I usually aim for 5 miles). I got more sliced turkey to continue making yummy turkey, cheese, and apple sammies, on TJ's yummy bread, with Duesseldorf style mustard this week (love sneaking the apple in there! got that idea from a Trader Joe's sandwich on offer). BUT, I really needed some green, b/c I need some on Sat and Sun to hit my 4x/week green freggie goal!

They had some heat and heat things on offer. I picked up Roasted Green Veggies (yay!! already roasted!), and Chicken Enchiladas Verde to make for dinner. And some kiwi and apricot for dessert.

I had only gone in for a couple things (bananas and turkey breast), so I didn't bring a bag with me. I had an armload walking back to the car, and after maneuvering to get the trunk open to get a bag, just dumped the armload in. The enchiladas kinda got wayyyy too jostled (okay, not kinda, lol), so the presentation here is a mess. But it was all yummy!

This is what they're supposed to look like:

    image.png Roasted Green Vegetables

    Trader Joe's link

This truly is a golden age of getting one’s greens in. We’d reckon that there’s never been a time in human history when so many easy and delicious vegetable options have been so available and for so reasonable a price—and Trader Joe’s Roasted Green Vegetables is a prime example. It’s made from a simple, yet profoundly effective mix of pre-chopped, cruciferous Vegetables like kale, broccoli, and Brussels sprouts, along with tender, proteinaceous, pre-shelled edamame, that are all flavored with olive oil, garlic, onion, salt, and pepper, and Roasted to perfection. Now, creating a hearty and flavorful veggie side dish for your next meal is as easy as heating up a tray in the microwave or conventional oven, serving, and enjoying!

In fact, our favorite thing about these handy, vegan Roasted Green Vegetables is their potential for freeing up the rest of your meal planning—with the veggies out of the way, you have all the more time to consider what protein and starch to serve with them. We recommend trying them out with a seared steak and potatoes, grilled chicken breasts over pasta, marinated tofu and brown rice, or pan-fried salmon with noodles. And if you feel like personalizing your Greens, the sky’s the limit: we like them topped with a bit of grated Parmesan, a drizzle of Organic Balsamic Vinegar, or any number of our savory sauces and seasoning blends.

I copied out the whole blurb b/c I thought Team Greenie would appreciate it - gotta love the line: "This truly is a golden age of getting one’s greens in. We’d reckon that there’s never been a time in human history when so many easy and delicious vegetable options have been so available and for so reasonable a price—and Trader Joe’s Roasted Green Vegetables is a prime example." !

I couldn't find the enchiladas on the TJ's site, so this is what the enchiladas are supposed to look like (heh) :

But this is what my meal looked like ;-). I cooked them all together in a cast iron baker's skillet, while I showered after my PF workout. That's enchilada chicken spillout on top of the roasted green veggies.

    PXL_20250517_234745210.jpg

And, dessert! I like my kiwi fruit sliced, b/c it feels weird to me to bite into the furry skin.

One sliced kiwi, one fresh apricot.

Post workout browsing@ TJs, love it! I end up with spillage issues too, succumbed and do a lot of bowls now, lol

Grams meticulously peeled skins, remember particularly peaches in summer after orchard trips.

Recently read up on fiber - lots of it mentioned in peach & kiwi skins. Good candidates for smothie addins.

I generally don't do juices - but they always look so refreshing, especially as we head into hot weather.

May do some fruit chunk juice popsicles though. My mangos ended up pretty mangled when I cut them up for freezing! Lol
