    I just made a parmesan cream sauce for my Brussels Sprouts...it was wonderful!!

    1/2 cup heavy whipping cream
    1 cup shaved parmesan cheese
    garlic powder to taste
    bay leaf
    basil to taste....

    simmer on low heat till cheese melts....sauce will slightly thicken over about 20 min.....

    This would be good on just about anything :)

    Thai Chicken Salad

    Dinner tonight was delish! This is from food.com, posted by tamibic. I didn't have cabbage, but I did have broccoli slaw mix. I cheated and skinned and de-boned 2 whole rotisserie chickens, then made a HUGE bowl of salad with romaine, red pepper strips, etc. Will be great leftovers tomorrow. Also had sliced tomatoes on the side, topped with a sliver of mozzerella cheese and fresh basil. Ahhhhh. Loving the summer foods again!

    Ingredients:
    2 chicken breast halves, cooked and shredded or cubed
    1/2 head cabbage, shredded
    1/2 head lettuce, shredded
    1 avocado, diced
    2 green onions, sliced
    1/2 cup chopped fresh cilantro
    Dressing
    1/2 cup rice vinegar
    3 tablespoons fish sauce
    1 teaspoon sesame oil
    2 teaspoons sugar ( i used spenda)
    1 teaspoon red chili pepper

    Directions:

    1 Make dressing and add the chicken~ toss to coat.
    2 In large bowl mix the lettuce and cabbage.
    3 Add chicken/dressing mixture the avacado and gently toss.
    4 Top with sliced green onion and cilantro.

    I used hungry girl noodles, (tofu) and some artifical crab meat, two wedges of laughing cow cheese (light swiss) and some hot sauce. Yummm!

    I've never heard of those noodles. Where do you find them?

    I love eggs (scrambled) on a parmesan MIM - (muffin in a mug) (add some avocado too, with your eggs, if you like it.)

    1/4 cup flax meal (ground flax seed)
    1/2 teaspoon baking powder
    parmesan to taste- 1 tsp grated
    other spices to taste (basil, cilantro, whatever you like that's ground)
    1 egg
    1 tbsp melted butter

    Mix dry ingredients, then mix in egg and butter, in a mug. Put in microwave for 1min to 1.5 min (when it looks dry enough.)

    Then take it out and slice it in half as a bun. Toast it if you want. This makes a wonderful sandwich.

    Could be really good with sundried tomato on it too, if your carbs allow.
