protien fluff / meringue drop cookies

ok, so not technically a fluff... but the idea was born from fluffing with egg whites.

4 egg whites
1 tsp vanilla extract
1/8 tsp cream of tartar
1/4 tsp xantham gum
2 Tbs cocoa powder
1/2 cup granulated white sugar
2 scoops optimum nutrition whey powder ( caramel toffee fudge)

preheat oven to 300f
beat first four ingredients until soft peaks form, slowly add sugar, beat on high till stiff peaked and glossy. fold in cocoa powder and protein powder, don't over mix or it will colapse.

spoon onto baking sheet to make 24 cookies. Bake for 18 minutes or until tops start getting hard. DO NOT OVER COOK!!!!

    Awesome !
    I will try this but probably use a substitute for the sweetener,however..

    Ideas:
    sprinkle with crushed candy canes
    Dust with a diet drink mix (lemon,strawberry,etc)

    I'm also trying to do a quick microwave version. Attempt this am was a fail :(

    Wife is on the way home with some splenda. I will try with some down the road, I hear bad things about baking with sugar subs. and at just 5 carbs per cookie? I guess I don't mind while bulking.

    BUT as a side note, if splenda worked, you would get just 15 calories per cookie, 3 grams protein, 1 carb and a trace of fat from the egg and protein powder...

    Ingredients:
    * 3 egg whites
    * 1/8 teaspoon cream of tartar
    * 1/2 teaspoon vanilla extract
    * 2/3 cup granular Splenda (You can use sugar instead in the same proportion )
    * 1 tablespoon unsweetened cocoa powder (optional - or use a different flavoring)

    Baking:
    Preheat oven to 300 degrees F 150 c
    Combine egg whites, cream of tartar, and vanilla.
    Beat until the whites form soft peaks.
    Slowly add Splenda (1/3 cup at a time)
    beat until stiff peaks form - high
    Fold in cocoa carefully - streaky texture is fun as well :)

    Spoon out a large oval into parts onto a greased tray or wax paper .
    Scoop out a slight indentation with spoon.

    Bake for 25 to 30 minutes.
    Remove from oven and let them cool for a few min.

    After cooling
    Remove "shells" and add desired filling - protein ice cream? Peanut butter, etc..

    Very light airy cookie with a nice taste.

    Other ideas:
    Use low cal flavoring like strawberry, lemon, vanilla, etc instead of cocoa
    Fold in walnuts into mixture for a bit more fat

    Made with splenda, the meringue had a better texture, made with lemon cream pie powder from xtreme formulations is absolutely amazing.
