Recipe - Buttermilk* Cinnamon Waffles

Hi, everyone! This is my first week of induction, and I guess I'd never seen a real craving before cutting out what used to be so every day for me. It's weird not to have fruit or toast at breakfast, though I do notice that I'm satieted through the morning now than I used to be.
Anyhoo, after deciding I really wanted waffles, I went looking and found a recipe for them that was for all phases of Atkins. Probably good for newbies like me, especially.
This is actually eight servings if you have the teeny square waffle irons, but I have a Disney Princess Belgian, so I had to make do. Made about four on mine.
I could really taste the artificial sweetener in it (as I've more or less cut it out of my diet the last couple years, it's way more prevalent to me now), but my mom thought it was fine with lots of butter. LOL
Oh, and the Asterisk (*) in the title is because I forgot to get buttermilk, and subbed almond. I think it turned out fine. They're not as crisp as regular waffles, but they definitely did in a pinch!
1 Cup soy flour
2 Tablespoons granular sugar substitute (sucralose)
2 Teaspoons ground cinnamon
1 Tablespoon baking powder
1/2 Teaspoon baking soda
3/4 Cup buttermilk
6 Tablespoons or 1/3 cup unsalted butter, melted
3 large eggs
3 Tablespoons sugar-free vanilla syrup
1/2 Cup cold water
1 oil spray for greasing waffle iron
Directions
Heat waffle iron per manufacturers instructions.
Whisk together soya mix, sugar substitute, cinnamon, baking powder and baking soda. Add buttermilk, butter, eggs and syrup and stir until well blended (batter will be stiff).
Add cold water 1 tablespoon (8 tbsp in a 1/2 cup) at a time until batter is easily spoonable and spreadable, about the consistency of a thick pancake batter.
Spray waffle iron with oil spray. Place approximately 3 tablespoons of batter in center of a waffle iron.
Cook according to manufacturer's instructions until crisp and dark golden brown.
Repeat with remaining batter. Serve warm. Enjoy!

I need a waffle iron! How many servings is this? Curious about carb and calorie counts.
NM, I see the serving size, I wonder if two waffles would still be fairly low in carbs? One probably wouldn't do it for me0
