I am a 6'1" 279lb female and whenever I try to start a new routine or any hardcore cardio such as Insanity, I always find myself, and my legs particularly, injured so bad afterwards to the point I can't walk, only limp horribly, for days. I do all of the Insanity stretches in addition to my own. Am I doing too much stretching? Am I doing something wrong? How can I tell when I'm going too far? Is it more likely for taller people to get leg injuries? Or do I just have a much higher chance to injure myself when I weigh a whole lot more?

Your legs are probably taking a beating because of the weight not your height and you're not alone when you say your legs hurt but I can still walk... I'd say take some rest between workouts or switch to a less extreme exercise videos, I mean it's not called Insanity for nothing!!!
I've read other videos that people are doing on this site, maybe you could try one and come back to Insanity further down the road.
One thing though, keep it up, keep exercising and you'll get there0 -
The one thing I would suggest to you is yoga. I was introduced to it through P90X. Now I swear by it because I'm more flexible than I've ever been, and the injuries I used to get don't happen anymore. I cannot tell you how much better I felt after all my workouts after I started doing yoga one day a week. I don't know if it will work for you, but it might be a lifesaver. I've lost over 50 pounds doing Beachbody workouts, and I credit yoga for allowing my legs to take such a pounding over the past year and a half. It's like magic.0

I agree with the previous poster that it could be weight. It could also be your shoes. Make sure you are wearing proper cross-trainers with a lot of cushion. There are a lot of high impact exercises but there are also a lot that you have to land softly on your feet. Try to land softly on your feet when you can.0
