So, I longed to eat a piece of toto..........anyone has a low fat recipe? Is there anything low-fat in Jamaican food though?

Let us know when you find it...lol
  • I think it's just one of those things that you have to eat and think to hell with the calories. I think I have a recipe somewhere but it's not low fat. Maybe you could substitute Stevia for sugar? but the coconut will probably still make it high calorie

  • ok by popular demand

it's not my recipe, but it's from a book of Jamaican recipes that I have. Everything else that I've made from the book, has usually been pretty good.

    1/4 lb butter
    1 cup granulated sugar
    2 cups flour
    2 tsp baking powder
    1 tsp cinammon
    1/4 tsp nutmeg
    pinch of pimento
    2 cups grated dry coconut
    2 tsp vanilla
    1 egg beaten
    approx 1/2 cup milk

    1. Grease shallow baking tin and preheat oven to 400F
    2. Cream butter and sugar
3 Sieve together flour, baking powder, coconut, cinnamon, nutmeg and pimento. Add to butter and sugar mixture
4 Add vanilla, beaten egg and just enough milk to mix to a stiff dough
5 Spread evenly in greased shallow baking tin
6 Bake for roughly 30 min
    7 Cut into 12 squares

    Enjoy!
