Now that looks really good. Which muffin recipe was it?

For pork of all types I prefer a dry rub and cooking as long as the available time allows as low as possible. The internet is full of time/temp combinations and rub recipes. All day in a roasting pan in the oven. Another favorite here is a cut of pork covered in sauerkraut done in a crockpot. The drippings can go right on…

Thanks for the Pink Floyd tip. I've quit following music except when my grandkids play something new, in a rut I guess. I've got it playing background right now

Is it really necessary for cauliflower (or anything) to pretend to be something it's not? Two nights ago I steamed half a head of cauliflower to go with stuffed chicken breasts. It needed some dressing up so I melted some butter in olive oil in a sauce pan and threw in the leftover cheeses I'd sliced for Super Bowl. It…

I've lived in a lot of places but the 2 of the longest duration are Minnesota and upstate NY both home to millions of maple trees. When I was still a Cub Scout some 60 years ago I helped my Dad haul buckets of maple sap back to where an open kettle was boiling over a wood fire to evaporate down to syrup for the Boy Scout…

Let's see. At that point in my life I was a grad student and army vet renting a house with 4 other guys. We had a pooled fund for household food. I agreed that I would grocery shop and make dinners 5 nights/week as long as others would wash dishes and clean kitchen & bathroom. Weekends we were on our own. Inspiration…

Out before 6 this morning shoveling snow powered by a cup of coffee with coconut oil. Expecting minus 20 this weekend, does that count as cool?

What the heck is sugar free maple syrup?

Back in my grad school days, when I was the only one left in the house some weekends, my go to dinner was a hamburger patty between 2 slices of toast slathered in peanut butter. Today I suppose I would skip the toast.

Is a program like water aerobics available to you?

In the US half & half is a commercial product, consisting of a 50/50 mixture of whole milk and heavy cream. That works out to about 12% fat. It's popular here as a coffee diluent.

I quit reading as soon as I got to the part about them selling me bottles of "fat burning supplements."

The omelets I made for my wife and myself this week were bacon, cream cheese and mushroom topped with cheddar. Clearing a driveway in zero degree weather meant that I could eat 500 calories of bacon, cream cheese and eggs washed down with coffee & coconut oil and still lose weight. Anyway, bacon and cream cheese go well…

With the caution that mice are not people, that is a very interesting study.

Eat (verb) is what I do. Diet (noun) is what I eat. I can't cheat on a diet; if I eat it, it is my diet. Whatever I chose to eat (whether It's a wise choice or a foolish one) is my diet and I have no choice but to live (or not live) with the results.

One advantage of being a guy, if you get some coconut oil into your 'stache with your morning coffee every sip of water for the rest of the day will taste like movie popcorn.

You can also start with a basic observation that most liquid oils will float on water. They may have a higher viscosity and appear "thicker" but that does not equal a higher mass density.

(*) Some good ideas. I received a Christmas gift with samples of beer & wine jellies for which I have not yet found a use. I think I could find room in my carb budget for a cream cheese pancake with red wine jelly.

That is very impressive. Theme song for whenever we backslide: https://youtube.com/watch?v=2H5uWRjFsGc

Interesting. I just looked at a label for Hillshire Farms pre-packaged Summer Sausage. Per 2 oz serving are 16 g fat, 11 g protein and less than 1 g carbs. That one thing I've never tried making myself. Perhaps some reading and experimentation is in order.

It's a fairly common occurrence, your body getting ready for waking up. Here are a couple links. http://www.mayoclinic.org/diseases-conditions/diabetes/expert-answers/dawn-effect/FAQ-20057937 webmd.com/diabetes/morning-high-blood-sugar-levels

The concept of maintenance has been on my mind as well. Last night I attended the memorial service for a friend who lost his final battle with the complications of diabetes. The beginning of his last battle coincided with my T2 diagnosis. For the service I had to dig in my closet for a suit I bought in 1980. The one I…

The label on Chobani Plain Whole Milk Greek Yogurt lists only skim milk & cream as ingredients. That may mean that they culture skim milk and then add the cream back in. In any case, it has less added stuff thn most.

There is a low carb MFP group here community.myfitnesspal.com/en/group/394-low-carber-daily-forum-the-lcd-group If you go to the Launch Pad there is a lot of information. 10 grams per meal (30 grams per day?) is quite low although many people eat that or less. In order to get adequate calories I would expect to include a…

In what range are you trying to stay in terms of calories, carbs, % fat? Does a reheated quiche count as a make ahead batch?

May I offer one other thing which could be going on for some people. For several years I've been treated for gout a condition caused by excessive levels of uric acid in the blood causing deposits of uric acid crystals to form in various joints. Mine has been controlled with medication and I've had no major flairs for 4…

Putting on an old hat as a manufacturing engineer (that hat has been in retirement for a lot of years) what you are describing is the same problem we had trying to implement statistical process control back in the 70s & 80s. It's easy when using a digital scale to be mis-led by the difference between accuracy and…
