Thank you for pointing out my mistake! I accidentally wrote 1/4 cup of hot sauce instead of just a tbsp. in my recipe. Also, there seems to be a glitch with the MFP app on my phone, because it keeps posting a lower calorie count with the title than it does when I edit the recipe. Glad you liked them! When I originally made the recipe, I too stuffed the raw pepper, however after about 40 minutes of cooking I felt as though the top filling was getting dry while my pepper was still not 100% cooked, hence my tweak for this post. Glad you found a method that worked for you (and your husband!) Enjoy!

Quinoa is one of the few plant-based sources of complete protein (makes you very full!) It's grain-like, and I would almost compare it to rice (except the grains are round and tiny.) I weigh Tuesday's and Friday's. Seem to be the best days for me to see my progress! For me, weighing everyday is a bit deflating because you work hard everyday to lose weight but don't see results as quickly!
