Good luck to you too! My food list looks almost exactly like yours, minus the eggs. And I am eating a lot of coconut milk for the cream. I miss HWC. I plan to try to make dairy free coconut yogurt this weekend. Just need to buy the probiotics for the fermentation :)

Great article, thanks! Preventing reoccurrence of cancer is one reason why I went low carb last year. Interesting YouTube channel from a guy who beat cancer if anyone would like to check it out; search "Chris beat cancer." He has a very compelling story about he cured himself through nutrition.

I need to buy a hand mixer and try it again! sounds like I just blended the heck out of it and the butter could not separate. I have one of those stick immersion blenders, but it overheats quickly. I'll keep trying differnt things, thanks! :)

I tried to make butter using HWC once. I carefully followed directions on how long and what speed to blend it so that the butter would separate from the milk. I nearly broke my blender (overheated), trying to get the butter to separate. I think it was all the additives in the HWC preventing it from separating.

Good point! I am thinking meat fast too. I have upped egg consumption lately so that could be it. If I can get hubby to BBQ a tri tip this weekend I should be in food for several days! Ribeye sounds amazing too!
