There is a recipe builder and a my foods feature in MFP where you can actually "Creat a food" or add a recipe. You just scan the bar-codes of the ingredients and plug in the amount you used, tell MFP how many serving you expect to get out of it, and it will tell you the rest.

Currently doing a carnivore keto challenge with a co-worker and my boss fur the duration of this month. Still haven't made up my mind about it but perhaps that's because I'm failing at it. Haven't given up yet and will continue to try anew each day for the remainder of the challenge.

Nuts, seeds and nut/seed butters can also be a good source of protein. Cheese is also a good source of protein and there are so many kinds. Quark, for example, is a creamy cheese which can easily be subbed for yogurt.

Seems to me as previously suggested, that zero carb (or carnivore keto) may be a good fit for you. Consider trying it for 30 days and take notes as to any improvements re the IBS issues or not to help you decide one way or the other.
