Happens to all of us. It sucks for a week then your weight drops back to reality. The mirror is a better indicator than the scale.

The scale is just a number. How do you look/feel? I had a big cheat meal on Sat and added a good 5 pounds to the scale and it stayed stuck there for 3 full days. I paid little attention to it as i know it isn't reflected in the mirror. It will go down eventually. keep on plugging along!!

I tend to cycle it in every now and then and it's a good way to limit the amount of calories you eat in a day. It all depends on if you can handle the long period without eating. On the bright side, If you like big meals I find IF the best way to accomplish this while sticking to your TDEE.

Sure is and works for many people. Your body doesn't care about any time-frame such as a 24 hour period and will gain/lose according to calories in vs calories out. A week is sufficient enough to provided flexibility without being too overwhelming (I wouldn't recommend doing monthly, for example).

MFP can be a good supplement of support when needed so you are welcome in the community! With that said, you should seek professional help if you haven't already for your eating disorder. Many in the MFP community had an ED in the past and overcame it. The support is here!

Both options are better than not weighing at all.

I do it sometimes but not often. If there's a dessert for example I want at night that's calorie dense and will not keep me full, I save all my calories for dinner to ensure I'm full until the morning :)

Given that I have less than 5 pounds to go...I'm losing less than 0.5 pounds a week! I am still losing super slowly so the plan is to reach goal weight by May 31.
