  • Throw dates, nuts (whichever ones you like), some citrus juice and zest (again, pick whichever you prefer) and cocoa powder or chocolate chips in a food processor. Blend until smooth and shape into balls. Tastes like chocolate truffles, but without all the cream and butter
  • Breakfasts this week: Mini whole wheat egg sandwiches Spinach and zucchini with goat cheese Low carb flax seed flat bread Lunches: Thai curry and butternut squash soup or Barley butternut squash risotto Citrus pecan green beans Snacks: Flourless thumbprint cookies Chocolate almond butter protein balls (if I get around to…
  • Thai curry and butternut squash soup, bacon roasted brussel sprouts and an orange
  • I use mashed bananas as a base to make cookies instead of the usual butter/sugar/eggs base. Just stir in some oats, ground flax seed and cinnamon and you're good to go

  • In general, anything under around 1200 per day will put your body into a kind of starvation mode. You won't really lose weight because your body recognises that it isn't getting enough food and so slows everything down accordingly. 1200 and exercise is about as low as you should take it.
  • Also bear in mind that as you cut calories, your metabolism will slow down. Without enough exercise to keep that going, you won't lose weight regardless of the calorie deficit. You can also use things like green tea or hot lemon cayenne water to help.
  • Pesto chicken - seal the chicken in a ziploc bag with some pesto for at least 30 minutes, overnight if you can. Saute for a few minutes on each side just to seal it, then finish in the oven. Bruschetta chicken - http://thepioneerwoman.com/cooking/2012/04/bruschetta-chicken/ Fantastic with a light salad, and you can adjust…
  • I found this recipe that I'm planning to try: http://www.gimmesomeoven.com/chocolate-peanut-butter-bake-energy-bites/ Although I don't like peanut butter so I'm going to try it with almond butter instead
  • For Asian wraps, this is my favorite recipe: http://www.thecomfortofcooking.com/2012/10/asian-beef-lettuce-wraps.html I've made it with lean beef and with turkey, personally I don't really taste much difference since it's all covered in sauce anyway!
  • Last night I made a batch of the mini whole wheat egg sandwiches that I found on the MFP blog, although I substituted the ham for bacon: http://blog.myfitnesspal.com/mini-whole-wheat-egg-sandwiches/ Since one of those wouldn't be enough, I also made a small "muffin" type thing (I'm using the term pretty loosely here!) out…
  • Today I'm having moroccan lettuce wraps, steamed broccoli and an orange.
  • http://chocolatecoveredkatie.com/2011/05/31/deep-dish-cookie-pie/ This isn't actually sugar free, although I think she has a sugar free version somewhere. I made a batch of this and baked it in silicone muffin cups to make little individual cookies, and it made so many that they came out to about 50 calories each
  • Yes, probably (I haven't checked the exact numbers), but as has been mentioned above, it's more productive to think about what changes will fit your lifestyle long term, and to consider the overall nutritional value of what you're eating, rather than just numbers of calories. For example, how much of it is carbs, protein,…
  • Personally I did this, along with pasta, while I was losing weight, and I'm now slowly incorporating them back. I'm trying to go for brown rice and pasta instead of white, since the high processing that white flour and white rice goes does strip some of the nutritional value. As for bread, I've switched from white to a…

  • Lettuce wraps work well. I've been eating a lot of them for lunches while trying to get down to my goal weight. I've made Asian versions, taco versions etc. Using ground turkey keeps the fat down to a reasonable level, and using lettuce instead of something like tortillas reduces the carbs. You can increase the protein by…
  • I haven't specifically done taco Tuesday, but I did make a batch of taco lettuce wraps for lunches this week. 1.00 lb(s), Ground Turkey 93% Lean 1.00 onion (148g), Diced Red Onions (Bj) 2.00 clove, Raw (136g) 1.00 tablespoon, Taco Seasoning (http://allrecipes.com/recipe/taco-seasoning-i/) 1 tablespoon tomato paste Approx…
  • Render down some bacon and remove it from the pan. Add the halved brussel sprouts to the bacon fat and saute for a few minutes, then simmer in either water or vegetable/chicken stock, depending on your preferences, for around 10 minutes, or until as soft as you like them. If the stock hasn't all been absorbed, pour out the…
  • There are also a load of quinoa oatmeal recipes out there if that's something you like.
  • As a start, you can use it to replace rice. It works well for stuffing peppers or squash, and I love it in egg muffins for breakfast. What sort of meals are you looking for?
  • I make quinoa egg muffins and freeze them. Grab a ziploc with 2 muffins on the way out the door and microwave from frozen at work ☺
  • I like to go through the fridge on Friday night and figure out what I have and don't have, then make my plan for what I want to eat for the week, usually using recipes from the MFP blog, but I'll google for others. My boyfriend and I then go to the farmers market on Saturday morning to get all the fruit and vegetables, and…
  • My advice would be to start with what you like to eat and find ways to make it healthier. Most of my eating plan has involved substituting starches like rice, pasta and bread for something better, mostly vegetables. Rice has been switched for cauliflower, so has mashed potatoes, pasta has been replaced with zucchini, I eat…

  • I couldn't agree more. When my boyfriend and I started dating, he would eat asparagus, maybe spinach, but virtually no other vegetables unless they were glazed with maple syrup! Treating the veggies in certain ways has made all the difference - Brussel sprouts with bacon and parmesan cheese are still Brussel sprouts after…
  • Buffalo cauliflower wing pizza - I made a batch of these as mini pizzas for my friend's birthday party and they were gone within minutes! - http://keepinitkind.com/buffalo-cauliflower-wing-pizza-with-tofu-blue-cheese-spread/ They can be made vegan and gluten free worn barely any extra work, so they work for almost every…
  • What kind of thing do you like? Most recipes can be made low(er) carb with a couple of simple substitutions: Cauliflower can replace either rice or mashed potato Zucchini can be used instead of pasta Spaghetti squash makes a great substitute for spaghetti
  • I love baked root vegetable fries like carrots, rutabega, parsnips (although be careful with those as the carbs are still pretty high), and zucchini fries too. Basically, anything vegetable you can cut into a fry-like shape you can probably bake into a fry substitute. The same goes for chips. When we occasionally make…
  • I made a similar thing a few weeks ago for some friends: http://minimalistbaker.com/vegan-gluten-free-black-bean-brownies/ It doesn't require a box of mix, and has very few ingredients in it. Basically, throw everything into the food processor and brownie mix comes out!! I did find that they stuck to my muffin tins, so I'd…
  • Flourless oatmeal cookies: http://ohsheglows.com/2014/10/24/flourless-thumbprint-breakfast-cookies-vegan-gf/ I've been on low(ish) carb for a couple of months and absolutely love these as an afternoon snack. If the carbs are still too high, you could always make the cookies a little smaller.
