  • I accidently used half and half (10% in Canada) for whipping cream in an Diet Doctor eggplant au gratin recipe is turned out fine, maybe not as creamy. Whipping cream is 35%, heavy cream is 18%. Yesterday I added eggs to that recipe and it's great, kind of a crustless quiche. Experiment!

  • According to the New Atkins for a New You, soybean, green edamame1/4 cup are 3.1 gms of net carbs, black soybeans (or turtle beans) 1/2 cup are 1.0 grams of net carbs compared to 1/2 of black beans (12.8 gms of net carbs). I've just started the vegetarian version of Atkins.
