Lunch today : Multigrain toast with cream cheese, sliced tomatoes and sea salt. I usually make this in summertime but these were excellent tomatoes for winter. It’s Valentine’s Day so I’ll be making hubby a nice dinner of salmon, asparagus and rice pilaf. Hopefully I remember to take a picture of that one!

Lunch - shredded cabbage and carrots sautéed with garlic oil, ginger, turmeric and soy sauce, a squirt of sriracha and a sprinkle of black sesame. Yummy and satisfying for under 300cal

Lunch = all the leftover veggies in my fridge warmed in a skillet with a little garlic oil and red chili flakes, and a roasted chicken thigh. I took the skin off and shared it with my dog. :) <400 calories

My husband and sons gave me an ooni wood fired pizza oven for Valentine’s Day. I finally found some time to set it up and try it out tonight! Chicken, broccoli, red pepper and garlic pizzas for me. Pepperoni for my family. These were sooo good!

Dinner - Bbq ribs, half a baked sweet potato, zucchini sauteed with fresh corn, onion and a little diced jalapeño. Lunch - all the leftover veggies piled on a leftover sweet potato with some cheese and hot sauce. The dinner was good, the lunch was even better.

A piece of advice that has helped me - always eat as though you are hosting a dear friend of an older generation: a balanced meal served properly on a plate, eaten slowly, while seated at a table. No standing at the fridge snacking, no fast food in the car, plate your food neatly so it looks appealing.

Lunch = flat-out spinach wrap with cold sliced rotisserie chicken breast, LTO, pickles and smoked maple habanero mustard, (which is my new favorite condiment), a side of salted radishes and a peach honey flavored seltzer. Very satisfying for 200+/- calories. I'm a guesstimate calorie person, so not exact.

Today, I had a cold salad of chickpeas, capers, diced red onion, thinly sliced zucchini and halved cherry tomatoes. I dressed it with olive oil, lemon juice, salt and pepper. veggie straws are a good idea, I love those too. anything with protein, rolled up deli turkey is quick and easy as long as you aren't on sodium restriction. berries are low calorie and satisfying.

2 chicken sausage links or two hard boiled eggs with sriracha, half a buttered English muffin and some type of fruit or berries. I also love half of a whole wheat bagel with cream cheese, smoked salmon red onion and capers but I don't make it that often

Put frozen peaches in the blender with a little honey and orange juice, blend the heck out of it. Depending on how good your blender is and how much juice you used, you can drink this like a shake or eat with a spoon. So good!
