Hey Celiac here too. I have heaps of recipes that work, but one I particularly enjoy is Zucchini Fritters (The Shrinking Violet). 1 grated zucchini. 1-2 eggs 45g Almond meal. I just finished C25K and did not think I would be able to do the 35min, but lo and behold, it came and went and I kept running, even after it was done. So I lost weight and realised I was actually taller than I thought, though I was 5'9", am actually an extra half inch on top of that. I like being taller cause I carry my weight better and I can reach everything.
