I have celiacs (can't eat gluten) and figured there had to be others out there on this app. Looking to swap some great celiac friendly, healthy recipies with others As we all know some recipes just don't turn out well (dry and crumbly or tasteless) so it's nice to have some tried and true ideas!

Hey Celiac here too.
I have heaps of recipes that work, but one I particularly enjoy is
Zucchini Fritters (The Shrinking Violet).
1 grated zucchini.
1-2 eggs
45g Almond meal.
Salt and Pepper to season.
Grate zucchini and blot the moisture with paper towel.
Mix together- the recipe said 2 eggs, but mine came out much better when I only used 1.
Cook in a fry pan...
So simple, easy and quick.
I usually eat with some salsa or tomato and they are relish.
If you add less almond meal it is less calories, but all up, on the recipe builder it came to 422 (2 eggs) 352 (1 egg).
And it is filling and tasty.0 -
Turkey stuffed zucchini boats:
Ingredients: 1 lb ground turkey, red pepper (chopped small), 2 zucchini (depending on length may need more or less, cut length wise and middles scrapes out and saved), mushrooms (chopped small), onion(chopped small), garlic(minced), Italian seasoning, pepper, tomatoes (diced small), optional mozzarella or feta cheese to top with.
Directions:
Brown Turkey in skillet and drain. Add in peppers, onions, garlic, mushrooms and tomatoes, sautéed for 10 mins.
Combine the zucchini scrapings in the mix, spices, and if desired a small amount of cheese. Mix well.
Fill zucchini with mix and top with cheese if wanted (if using feta do this after they're cooked). Bake at 375F for approx 20 mins.

These are all recipes that I found on pinterest and have tried and we like. If something does call for flour (the farmhouse pork particularly, I just use a gf blend in it. That's one of our favorite recipes. I use gf spaghetti in the rice-a-roni. Any pasta dish can just be subbed with gf pasta.0
