Sounds like great plan. I try to buy my poultry and seafood fresh and whole. I freeze them and make my own broths and soups with the bones/etc. Also use the leftovers for casseroles and salads or open faced sandwiches. I like this recipe. I use egg beaters instead of raw egg ( pasteurized whites) rather than mayo . Pure extra virgin olive oil . The rest is the same. Be careful with the cheese it adds up on the calories. A little goes a long way. This makes a nice light dressing. Better then store bought!

Why not use liquid egg whites instead of nut powders or dry milk. It lends itself to many uses and has little or no taste.It is inexpensive and requires no preparation. Just add it to your drinks/smoothies, recipes. This is great if you have no egg allergies.

I also use thin slices(the long way) spritzed with evoo on each side and grilled then make pannini sandwhiches along with with portabella mushrooms and roasted sweet red peppers. You want to use a light thin bread and use a pannini press or griddle leaving grill marks.
