  • I'll have to try the guacamole idea - I love it, but was missing the right thing to dip into it (celery does NOT work well). These were purchased ones, and all we did was put the cheese on to melt it, and then dipped into sour cream and salsa. But the cheese/baking made them rubbery/soggy. Ew.

  • Wow - sorry they have that affect on you! I've been able to eat an apple here and there - granny smith, nice and tart, and I do sprinkle salt on it (old habit learned from my Dad) and I haven't had any ill feelings. But maybe my net carb count is set higher? Feel better soon!
  • I'm wondering if this would also work with the carton of broth? I don't have any on hand at the moment (or bouillon) - so more of a curiosity! The only issue I see is that the broth doesn't come hot from my Keurig - so I'd have to heat it up (meaning more dishes). And just the butter? No coconut oil?

  • I've done this in the microwave as well. I've cut cheese into 1" cubes, then place about 5 of them in a circle on parchment paper, microwave for 2 minutes and voila - cheese crisps!

  • Thanks everybody! It doesn't help that I also work by myself, and from home - I have a full commercial kitchen in my basement. But at least I can close the door and leave it there and it isn't in my kitchen fridge in my face all day. Nice to know I'm not alone, and that it can be done!
  • Thanks! I forget who said it on another thread here - but I need to be an "all or nothing" person with sweets & junk. Potato chips are my destruction. Honestly, I'd rather the bag of chips than a piece of cake, so I'm good with not eating the sweets I work with. But it is hard!
