The smallest amount of rice I can make in my rice cooker is 4 servings so it's sushi week until it's gone. I don't follow a recipe but roll up whatever I have in the fridge. Here is Eho-Maki. My favorite way to have eggs is an omelet. Since nobody needs a recipe for that I bring you Eho-Maki which I made to celebrate the first day of spring. Yeah, that's right. Basically it's an omelet rolled up into a sushi roll. I use any vegetables I like and leave out the fake crab since I can't be bothered to buy it.

Monday - yes Tuesday - yes Wednesday - yes Thursday - yes Friday - yes Saturday - yes Sunday - Not quite. I had 1g sugar white sugar in the whipped topping on my Sunday coffee. I'm still pretty pleased about the day.

@Dex_ LOL. No. But when I went GF 10 years ago it wasn't the trendy thing to do and cooking was hard. I turned to Mediterranean, Indian, and African recipes as an easy way to cut out the wheat.
