Try The Happy Pear and Cooking With Plants on YouTube both incredible channels and easily accessed ingredients and recipes. Just be aware that they are outside the US so make sure you do accurate conversions. Cooking with Plants does list the imperial conversions on her blog which is always linked on her videos.

I make my own refried beans with red lentils and pinto beans. I follow the standard refried beans recipe but just sub lentils for half of the beans. My favorite smoothie is coconut water with strawberry, blueberry and banana. Another good one is coconut water with peeled lime and green melon. Also coconut water with a semi-sour apple, kale and spinach. My smoothies are usually between 150-350 for 24 oz

Also do some research about which types of protein your body actually uses, so that you get a powder with the most usable protein. Adding ingredients that have protein like nut butters would also add protein.

I only read the title so this may be irrelevant but my advice to someone who's plateaued is to just stick with it. From Jan 1 to Feb 15 I lost 20 lbs then I plateaued I was stuck at 20 pounds lost until just last Friday when I finally lost a pound, that's almost 2 full months without gains or losses. Just stick with it.
