One trimmed brisket (I guess this is the "before" shot)...tomorrow night at 6 PM it will be delicious ;-) In case you are wondering, I trimmed off 2.6 pounds of fat from a 13.6 pound (pre-trimmed weight) brisket. 2.6 pounds of fat is about the size of a cantaloupe. the can of Pam is for scale.

Ummm- not sure if this helps - but I cut 2.6 pounds of fat off a brisket last night while trimming it. It's beef too. I have a picture to prove it. The can of Pam is for scale.
