If I'm doing something that works and I enjoy then I'm not big on trying the old ways, but FWIW you can put in a few hours fasting then have a modest size treat followed by a walk and you'll not detect the difference.

Try the Help in case there's a known issue. You're getting a calorie adjustment via the iOS information, are you seeing different steps transferring over or are you using MFP to count steps separately.

Is the data remotely reliable though ? I've been reading a few articles making the case for not using the data from Food diaries, recall interviews, NHANES etc.
