Mostly my micronutrients actually! Iron/potassium/vitamins/calcium are pretty important for me as a vegan. Protein is an easy one because we all get so much protein in our diets already, I never have to worry about hitting my goal.

Depending on your height and whatnot, perhaps you are eating too low calories? May sound weird, but you should look into calorie cycling/zig zag dieting on higher calories. It can possibly help speed up your metabolism and help you achieve weightloss. Hope that helps!

Teriyaki kabobs and orange sauce seitan. Kabobs were roughly 200 calories and the seitan was 280 so around 480 calories-ish. More of a light lunch, but it did the trick for dinner last night! The kabobs were super delicious in the teriyaki sauce and baked to perfection. Yum!
