A) 800 calories is far too few B ) Your weight is well within the healthy range and any loss will be slow. C) Eat at least 1200 calories per day. Use a food scale for accuracy. But your body is still maturing. You need the fuel to keep yourself healthy, pretty and feeling the energy of youth.

For me it somewhat depends on when I'm getting the steps in as well. Steps early in the day will give + adjustments sooner than if the steps happen later. But I think my fitbit is on crack lol

When mfp calculates your extra activity calories, it factors in what you've already established as a calorie base. For example: my daily burn at light activity is 2278 according to mfp. The activity trackers readjust as the day goes on. Basically they look at any given point as "you'll be exactly this active the rest of the day" and project a number. Then if you chill for a few hours it has to reproject the number because you weren't as active as the projection prior.

Red meat tends to be higher in fat, so swapping it for leaner meat in the same quantities will naturally lower your calorie intake.
