Bill, I usually do a red currant cumberland sauce with venison, but didn't have any currant jam or red wine. I had dry sherry, balsamic glaze, and peach/jalapeno jam. It worked well. Balsamic makes everything taste better. Sure hope your ortho surgeon get your knee working ASAP.
