16/8 has always worked well for me. I'm not big on eating early in the morning so I skip breakfast and then I get so caught up with my day that I don't eat until later anyway

You technically should. You could end up with a pretty low net calorie amount if you don't. Take me as an example. My usual hour and a half cardio workout burns about 800 calories. If I eat my 1200 calories only, I have a net calories of 400 which isn't healthy.

I used to under eat a lot so I'm trying to stay away from that. I'm hoping my body will adjust to eating more without feeling like I'm forcing myself to eat. I want to lose the weight but in a healthy way.

Give your metabolism time to regulate. If you were jumping between restricting and binging before new year, your system may need time to get back on track. Could just be food weight considering you were barely eating before.
