No, weight yourself daily immediately after waking up and using the toilet. What you should not do is believing a change in weight at a point in time means you are thinner or fatter, rather, use your daily weights to determine the trendline, as long as that's going in the right direction you are doing fine..

Don't go ham on cardio, use a small caloric deficit and keep up the resistance training. Unless you have a deadline there's no reason to rush it

There is no set point, there is probably a settling point like a thermostat or cruise control . Google images of anorexics or concentration camp survivors.

Maybe it's all in your head, post a pic. Too much fiber can cause bloating in some people, does your belly jingle or is it rock hard? What? You get bored from 60 minutes of lifting but not from 150 minutes of cardio? Try doing a circuit style training or use lots of supersets.

Chug carbonated water like no tomorrow. Some feelings of hunger is normal when dieting, if you were used to eating 2500 now you are on 1500, yes you will be hungry until you are used to eating less. Keep yourself busy so you don't think about it.

Christian Guzman is 6 feet and is about 170 pounds, and I'm gonna say he's got way more skeletal muscle than OP. 200 pounds at 6' and sub 12% is extreme jacked for the "normies", in fact, even many steroid users will not get to that stage.
