Roasted cauliflower 'steaks' (basically cut the cauliflower into thick slices) with olive tapenade is so good and I usually don't like olives. Can't remember where the tapenade recipe came from but I think most recipes would be veggie and gluten free.

Costco for certain things that are staples for me, Aldi for dry goods, Sprouts for fresh items and dry goods I couldn't find at Aldi.

I've gone to Costco to buy only cat litter and beer, I'm sure other people made assumptions about my life that are 100% correct! Costco really is the premium spot for weird carts. Do not do keto without talking to a doctor or RD first, it can be dangerous to do keto while taking medications that lower blood sugar. In fact speaking with a dietician if possible is probably a good idea because you do have special dietary considerations.

Consuming too much potassium can be very dangerous. You can end hospitalized or dead, that's why over the counter potassium supplements have such a low dose they're basically useless. You're much better off eating a varied diet and being mindful of including some potassium rich foods.

If the mess is a major issue for you look into one pot meals. I find I make less mess cooking with a food scale, because it's a lot easier to put a mixing bowl on the scale and weigh out ingredients directly into the bowl rather than dirtying 100 measuring utensils to do the same thing.

If you don't like it because you don't like sweet breakfasts savory oatmeal is really good. I'll mix in some soy sauce, a little cheese and top it with salsa and a fried egg. You can also do this with grits.

I tried it and got so bored with my meals and felt miserable. My grocery bill went through the roof too because your only calorie-dense food is meat (fruit and potatoes are allowed but you're not supposed to overdo those). If you post the diet plan here I bet people would be able to help estimate the fat/protein breakdown. It sounds like you're going to a medical weight loss clinic, not trying to treat any particular disease with this diet, so they probably gave you a very high protein diet.
