I believe the stalk has more carbs that the florets which is why they are sweeter.

I sometimes like to eat my kale by adding it to soup just before I'm about to eat it. That way it still has a bit of crunch but is wilted enough to be easier to eat.

I just started the ketogenic diet 6 days ago after joining and reading through the facebook group for those following or interested in this way of life/eating. There are 3 different related groups.
