I went to gym classes for years and lost little weight. Got aVery toned though. Then I started running which I found burns way more calories and gets you even “fitter” . Back then my goal was to lose weight and now my goal is met 73kg my current goal is to run faster!

I agree with this 100%. If I do something that stresses my body (in your case doing couch to 5k) then tissues become inflamed for a while and retain water. Give it time.

I have a Vivoactive HR and if i go on a 10km run (about 6.5 miles) it nearly always calculates from 600-700 calories for me. Have you put all your stats into Garmin? I don't think it will calculate properly if it doesn't know your age/height/weight or heart rate. Also are you walking on a treadmill or walking on the road…
