I love making anything with cabbage or spaghetti squash. One head of cabbage or one squash can make enough for two people to eat two to three meals. "Fried" cabbage (not really fried) is awesome, just Google some recipes or go on Pinterest. Most have just some protein added so it's low carb - skip the ones with noodles.
