Protein and then fats. I only worry about carbs to make sure I don't go over. That being said, when I was running and doing marathon training, I equally prioritized my protein and carb intake.

I use it in my vegan mac-and-cheese recipe (I'm not vegan, but try to avoid dairy), on homemade kale chips, on eggs... anything! SO good!

I almost always lift alone. As long as you know your limits and have the space to bail on a lift if it's too much, I don't see a problem with it. Just lift smart!
