I wouldn't expect it to be such a large difference but perhaps its cooked in butter, which is common for omelettes. Also are they including the sides that come with the omelette such as toast/fruit/hash-browns/pancakes?.

I go with the Maple Farm brand dressings, they have fat free raspberry vinaigrette, fat free cranberry vinaigrette, Fat free balsamic vinaigrette, and fat free wasabi Dijon at the Kroger near me. All are delicious and low in calories and fat.

Look to vegan and vegetarian recipes, they have some interesting choices. Also mix up your spices, chili chicken, onion soup mix chicken, fajita chicken, mole chicken, enchilada chicken, tandoori chicken, BBQ chicken, butter chicken. The list goes on and on, spice mixes are your friend.

If you can stomach it I have found that Kale makes a good salad green and is more durable than other leaves. I use Kale, broccoli florets, carrots, and red cabbage for my salad base and then in separate baggies i keep the moist stuff like cucumber and tomato to mix in when I am ready to eat the salad.

Look at fresh/frozen vegetables and beans at Aldi if you have one. Those are cheap and healthy, and if you have to eat canned food toss a bag of frozen veg in the microwave to go with it.
