I'm 30 weeks and am having some blood sugar issues (not GD, just spikes on occasion, my midwife is having me monitor), so that's actually why I got back on MFP, to measure macros. I'm hoping to find some patterns soon so I can see what my threshold is, but it seems like there is so much to it than just macros.

I do recommend not replacing gluten. I.E. just do without bread, use lettuce leaves instead. Rice, potatoes, quinoa and corn are all naturally gluten free. It'll become second nature after awhile, and if it's for medical reasons it'll be so worth it.

I've done a couple before and am permanently AIP paleo with some successful reintroductions. Good luck, Whole30 changed how I saw food and how i can better care for my body with it.

I like winter squash as a porridge. Cook until soft, mush it up add some coconut milk and fruit, nuts, coconut, whatever it is you like. I'll throw in a scoop of callogen powder and it's a complete meal. I'm AIP paleo and am working on increasing carbs as well.

Just and FYI Ezekiel bread is not gluten free. In fact wheat gluten is added to improve the texture of the sprouted wheat. I still think it's better than regular bread, and some people are able to handle it better, but no where close to gluten free, so please don't try to feed it to anyone with a gluten intolerance.

Taco salad is a good idea. I'll have to add that. I made some plantain muffins, a big quiche and carmelized onion to go into a patê this morning before running out of steam.
