    I average 800g or more of veg and fruit a day, I'm good thanks ;)

    That's awesome OliveGirl, what are some things you do to make that happen? Any tips for someone wanting to increase veg? I'm wanting to also, especially leafy greens.

    I decided to really up my intake after the big meta-study came out earlier about quantity of veg/fruit and reduction of various diseases-really struck a nerve with me!

    My biggest piece of advice is to start upping your intake SLOWLY-do NOT try to do what I did, and go from very few veg/fruit a day, to 800g+ a day-I thought I was going to die :p Give yourself a few weeks to gradually make the adjustment-your body needs to adjust to the increased fiber. After a few weeks my body adjusted to the changes and now I'm fine, but it's definitely something you want to ease into lol :)

    I do a mix of fresh and then cooked veg/fruit-I do a lot of green smoothies, large salads, stir frys etc. I buy what's in season and cheap and mix things up based on what's on sale. I also stock up on certain fruit when I can get it cheap-things like strawberries, blueberries and bananas freeze well and are great in green smoothies. Yesterday I was at Aldi and they had marked down pints of blueberries for $1.19 and 1lb containers of strawberries for .99-I bought 10 containers and then came home and washed/mixed them into pint freezer bags and they're now in my freezer. I'll use them in green smoothies and muffin recipes.

    I use spinach instead of lettuce now and I use spinach and kale in my green smoothies (I try to make one 5 days a week). I'm still working on expanding my leafy green horizons, baby steps!

    Don't think you have to eat veggies plain. Oftentimes what I put on the veggies has more calories than the veg but that's okay. We just had a slaw of shredded beets and red cabbage that had been roasted with balsamic vinegar -- hot the other night -- but tonight cold as a slaw with a dressing of light sour cream and a balsamic and cranberry dressing I had left over from a previous salad.
