I do a lot of cooking on Sunday and it lasts for most of the week. Crustless quiche for breakfast (quick to make and it is six servings. Add in whatever veggies you like). There have been some studies showing that blueberries, apples and grapes can reduce the risk of Type 2 diabetes (NYT article). I agree that most fruits are healthy but some definitely have more health benefits than others. Worth researching some articles that show the benefits of different types of fruit.

Crustless veggie quiche is great for breakfast,lunch or dinner. I make a bunch in my muffin pan and they freeze beautifully. Also rice/beans and black bean chili freeze well.

I also use the light Hellmanns mayo for my tuna salad lettuce wraps. I include lemon juice and a bit of Dijon so I only need to use a bit of Mayo. I use the recipe from America's Test Kitchen

Turkey and black bean chili is awesome and can be frozen. Also homemade soups. I use my dutch oven to make chicken and shrimp jambalaya too and leftovers are even better

I sometimes bring homemade soup in a thermos. It stays hot until lunch. I also LOVE making mason jar salads. I add boneless chicken and mix up the veggies. I do them up on Sunday for the entire week and they stay fresh. Really easy to transport to work too

HI Bethanie. I also have PCOS. My Doctor recommended a book to me called the Insulin Resistance diet and it talks a lot about pairing a carb with a protein (link and balance approach). It has helped me a bit. Best of luck on your journey!!!
