Thank you, @acpgee I finally gave a quick and dirty version of this idea a try. Soaked the meat in red wine vinegar and garlic overnight, sprinkled it with ground coriander seeds, dried it in a low and slow convection oven. Every once and a while I find sample packets in the locally owned, single store health food store. Sometimes these type of places have open houses or vendor days where you can sample a lot of items. Sometimes asking the employees at these places they will be able to assist you in sample items.
