If you baked or roasted chicken you would know. Chicken fat melts at 200F and unless you are drinking the liquids and licking the pan, you are counting fat at 9 calories per gram that you are not eating.

Never weigh chicken raw unless it is cut up and put into a dish like stew or casserole where the liquids are captured in the dish.

Red meat gives a pretty good protein to calorie ratio and I find myself more satisfied by a small portion of lean red meat than an equal number of calories from carbs. So don't trick yourselves. You have dropped some calories out and not yet replaced them. That's all.

Fat is good for you unless it drives your calories over. Better skin, better digestion, vascular health, etc. Relax. You don't need carbs and protein is a wide range of what can be ok.

I have been doing a lot of subtraction. I weigh the avocado or whatnot, take it to the table and eat what I want and weigh what is left. Sometimes its just the peel and the stone, sometimes it is leftovers that go back in the fridge.

My cat ate a whole chicken, but then he can handle the skin, gristle and bones and lap up the liquid. Other than that, I doubt anyone ever ate a whole chicken. Weigh what you roasted, weigh what you have left from the meal and apply the proper roasted chicken (cooked) calorie per gram from the USDA.
