Hmm, when I did it, you had to have 5 of their pre-packaged products per day + 1 solid meal (5 & 1 program). It could be it has changed, though. My information is from quite a few years ago, admittedly.

Maybe you could look at https://www.drmcdougall.com/health/education/recipes/mcdougall-recipes/ -- they're not all absolutely fat free, but they're extremely low in fat. They're all vegan, so if it's your preference, you could substitute some items here and there to suit your preferences.

It's individual. Some people find compressing their eating time window helps with diet adherence, others find the opposite and that they're hungry all the time. When I was doing IF, the first week was hard, but after that it got a lot easier.

I go for option c, since I don't have any medical conditions requiring I limit carbs. C) Ignore carbs since they are only a problem if they are consumed to such excess that you're getting insufficient dietary fat or protein.

You don't need anything like shakeology...but if you really want a nutrient fortified shake, something like vega one is probably the closest thing to shakeology (vega one has a little more protein, but no msm), and much cheaper.

I don't think Intuitive Eating (as defined by Tribole and Resch) and counting calories can coexist, since the core belief of intuitive eating is internal hunger and satiety cues determine when and how much you eat as opposed to external rules.

Doesn't really matter. Ideally, you will have some protein every 3-5hrs or so, but you don't need to take it acutely either right before or right after a workout (although you can if you wish).
