In 2/2.5lbs I'll be halfway to my goal. In 5lbs I'll be under 200 for the first time in about 5 years. 2nd time around doing this, I lost 100lbs in 2012 and kept it off until Covid hit and I lost my job, then piled it all back on. So I know I can do it but sheesh is it hard having to do it all over again!

Last night was linguine bolognase. Tonight is not fully planned but I have a tonne of produce to use up so I'm thinking a chicken breast/roasted veg combo. Got mushrooms, courgettes, tomatoes, Romanesco, cauliflower and sweet potato that I think will go together?

England - chilli con carne was a staple growing up that I loved and still love, although my version is a much less rich affair filled with veg and beans and a minimum of carne. Also spaghetti bolognase, my mum liked to make giant vats of both that we'd eat for a week straight.

If you're up to prepping a bit in advance I like to cook up about 200G of chickpeas (you can also use canned if you don't fancy cooking them from raw), season and keep in the fridge. Nowhere near as exciting as all of the things I've seen so far on here but my local supermarket recently started stocking kohlrabi, cassava and plantains and I am so excited! I'd never tried kohlrabi before but it is amazing! Went through 2 bulbs(?) in about a week, sliced super thin and just eaten on its own. Delish!
