  • I make the same recipe but use the sugar free cake mix. I have also made it with yellow and white cake mix (which gives you pumpkin cupcakes). I use the standard size cupcake pan. I make about 18 cupcakes per mix and they work out to about 80 calories each.

  • I make the pumpkin muffins too, but use the sugar-free yellow cake mix + 15 oz can of libby's pumpkin (plain pumpkin, not the pumpkin pie mix). Don't add anything else. Just follow package instructions for cupcakes to get the cooking time.
  • One of my favorites is spaghetti squash with either marinara sauce, or a little balsamic vinegar. Spaghetti squash is very low in calories, and very filling. And pasta topping works great with it.
