Try to eat 5-6 smaller meals throughout the day. This is what I do and it holds me over a lot longer than eating 2-3 big meals. Right about the time I get hungry I get to eat one of my planned meals, which keeps snacking down to a minimum.

I would rest it for a few days till the inflammation goes down. Swimming or weight lifting with your arms would be good to do while your knee is healing. After that just try to take it easy and gradually increase activity with it. Working out till the joints hurt won't make them any stronger.

It would be better to spread them out through the day rather that eating most at one time. I try to have about 5-6 smaller meals in the day rather than 2-3 large ones like I used to and it seems to work pretty good.

I wouldn't ignore the calories from working out, but maybe reduce them a little. If your heart rate monitor or excercise machine says you burned 800 in a workout, maybe just eat back 600 of those. Also, make sure you keep some strength training in there while you are dieting so you lose fat and not hard earned muscle.

I'm curious too, as I am in the same boat as you. I just lost about 30 lbs over 5 months and want to bulk muscle back up, but don't want to gain back fat.

I changed mine to 50% carbs, 15% fat and 35% protein. I don't really have a scientific reason for it, but it seemed like lowering the fat would be a good thing.

I completely agree. Typing in all CAPS with abbreviations and whatnot is painful to read. As for the topic, I didn't have a problem with that.

The way the forum works is posts that don't have activity get moved to the bottom, while posts that are frequently commented on stay at the top. When someone simply posts "bump" they are essentially trying to keep the post active so it doesn't get buried under pages of old posts.
