I love the overnight oats. I prepare several days worth at a time; mix them up in individual mason jars and keep refrigerated. Quick, easy, and filling. 1/3 cup oats 1/3 cup Greek yogurt 1/2 cup almond or soy milk 1 tbl ground flax 1/2 cup frozen blueberries Or, on colder days, I'll cook up a large pot of steel cut oats.…

Lentil soup is one of my favourite go-to recipes! I cook mine with parsnips and a chopped up apple. Puree the heck out of it and then add sausage (I use a soy sausage because I'm vegan - but same idea!)

I love soup for dinner! But tonight I'm having a slice of a lentil loaf - with apples, and walnuts and carrots - oh my! *smile* And a big plate of roasted veggies.

When was your last Dr.'s checkup?

Lentil soup is my fav and so easy to make... Dried lentils (or canned if you're in a hurry) and whatever other veggies you want to add. Suggestions: Sweet potato, carrots, parsnip, mushrooms.... I've even added chopped kale. You can fry up some onions & garlic and add that too. Add a bay leaf or two. Add 4 cups low sodium…

This suggestion might be a bit radical, but it worked for me... Go Vegan. ......Are you still here? Good. Why not try it for just 30 days and see how you do? Can't hurt. Make sure it's whole foods and unprocessed foods. It's easier than you would think! I've been vegan for 6 weeks and without exercise (I'm a lazy sort)…

Another sweet treat I like is 1/3 cup Amande yogurt (or yogurt of your choice), 1 tablespoon chia seeds (optional), 1/3 cup berries and 3-4 walnut halves chopped.

From one of my favorite sites! http://ohsheglows.com/2011/09/11/5-make-ahead-vegan-and-gluten-free-lunches-part-1/ Go Go Glow Mix Energizing, delicious, and packed with antioxidants. This is the perfect mix to throw into a packed lunch. Sub the almonds with sunflower seeds if you want it nut-free. All ingredients were…

I start with garlic, a sweet pepper and an onion. Chop it all up and toss it in a fry pan. Make that your base and create from there. Now root through your fridge and find whatever other ingredients you can find. Last night it was lentils, green beans, spinach, kale and carrots. I added a splash of toasted sesame oil and a…

I too have a nasty sweet tooth. Offer me a candy or a cookie and I'll eat the whole batch! For me the secret is: keep it out of the house! Once you wean your body from the sugar it gets easier. A piece of fruit sometimes helps. My favourite treat is 1/3 cup (vegan) yogurt with 1/3 cup blueberries and 3-4 chopped walnut…

A spritz of fresh lemon juice.

Great recipe. I only use 1/8 tsp of stevia and find that's enough. Additions I've tried so far are walnuts & raisins. I wonder how much pumpkin or apple sauce to use?

Eatingwell.com has some great recipes. The trick is to buy fresh. Nix the canned & packaged goods wherever possible. Try new foods. It's fun!

We don't have kids at the table, so it's a little easier. But my hubby isn't as fond of spinach as I am. I do love a spinach salad with strawberries & nuts! (some people don't like walnuts - have you tried sunflower & pumpkin seeds?) Generally we cook together and make considerations for each others tastes. I put more…

Wow! I never considered going as low as 110 lbs! I'm 5'0" and currently weigh 125 - which was my goal. And my body is feeling comfortable there. But then again, I'm 50 years old and not 20, so I'm sure that must make some difference...

I use chia seeds EVERYDAY! It adds about 5 gr fibre to my oatmeal. Don't cook with it - the heat diminishes it or something. I put a Tablespoon of chia seeds in my bowl with 2-3 Tblsp water. Stir it around and let it sit about 5-10 minutes while your oatmeal is cooking. It will get geletanous (sp). Then dump your oatmeal…

I agree. I haven't given up flavour at all! I really enjoy my new healthy meals.

I make a big pot of soup on the sundays and freeze it in individual sizes. They are great for lunches - if you have a microwave. I always plan the day before what to take. I'm too rushed in the morning, and this way it fits in with my meal plan and I know I'm eating balanced all day.

I agree - the last few pounds are the toughest. But you've come this far, so don't get discouraged! Maybe you are building up muscle and that weighs a little more...but that's a good thing. Is it possible to have a look at WHAT you are eating and see if you can change it up a bit? Such as a reducing sodium or increasing…

My husband likes cold leftovers. But he's weird that way. :) We make a big salad the night before and have extra for lunch the next day. Add some chicken, a bit of cheese, a boiled egg...make it interesting. Or thinnly slice some leftover beef and mix it with red onion & red pepper and Oil & Vinegar dressing. Nice over a…

I just discovered Terra Veggie Chips. I bought the sweet potato & beet ones. A little sweetness from the potato. A WHOLE lot less salt. Very tasty. And I found that while I didn't quite stop at 12 chips, I didn't eat the whole bag either, because I found it filling. 12 Chips: 120 calories 35 g sodium 12 fat 2 fibre 3 sugar…

Here's the answer: Say NO to fast food. Just do it. Put your foot down and say: I am not going to poison my body with that stuff anymore! Now go web-surfing for some fresh meal ideas. Eatingwell.com is a great site. You can do it!

I didn't know that! That's a great tip! I just started experimenting with it as well. I find I don't like it raw in salads. Too tough. But I've been chopping it up into my soups, chili and pasta sauces.

You can tell yourself you want to lose weight and be healthy. And you can really want it. But unless you get totally committed and into it, it's going to be hard. It's like when you try to quit smoking - you may try for a dozen or more times, and then all of a sudden the timing is right and you've got the willpower to…

This is what I make all the time. Often I'll add some oregano and crushed garlic. Or you can just spritz some fresh lemon juice over you salad as well.
