Frankenstein Muffins

I felt like baking today, so I created these muffins that turned out decent enough. I used one of those Wilton Giant Muffin tins, which make 6 muffins instead of the usual 12. Little muffins don't make mongo happy! lol The point here is the calories would be cut in half for a regular sized muffin pan.
1.5c. shredded carrot
2 shredded apples - I include the skin, seeds and all...just not the stem.
1c. all-purpose flour
1/2c. Quinoa (ground down into flour)
3/4c. Flax seed (ground down into meal)
3/4c. Old Fashioned Oatmeal (reserve some for topping)
2 Large eggs
2tbsp. Truvia
2tsp. Baking Powder
1/2tsp. Baking Soda
1/4c. Walnuts (reserve some for topping)
3/4c. Almond milk
Each: 324 calories; 11g protein, 45g carbohydrates, 11g fat
Remember - chop the above stats in half if using a 12 muffin tin.
Directions -
1. Prepare Quinoa flour in food processor
2. Prepare carrots / apple. Finely shred. I peeled the carrots but not the apple.
2. Sift all dry ingredients togehter
3. Prepare wet ingredients in separate bowl
4. Combine Wet and Dry together and FOLD as few times as possible until all the mixture is wet.
5. Oil up your pan, spoon in the batter.
6. Cook @ 350 until you can enter a toothpick in the center and it comes out clean - roughly 30 - 35 minutes for this big pan; likely less, around 20 minutes for a 12 muffin pan.
Here are a few pictures I took before eating one.
Next time I'll add spice! and use big walnuts. All I had were the small chopped ones this time. I'll also make the batch larger so I can get that nice big muffin top that makes a muffin, a muffin.

Pumpkin spice is good in lots of things but I was thinking along the lines of Allspice, Nutmeg, Cloves, Cinnamon and a touch of ginger for that traditional spice cake flavor.0 -
I knew that I have seen carrots on the muffins and I was right about the oatmeal. Too bad, I can't reach into my computer and take one of your desserts, of course with your permission. Keep up with baking.0
