It definitely sounds like your intake is too low. When I figured my calories, at about 245 pounds, I was at 1500 and that was the low end. I don't exercise at all and have a sedentary job. You're not fasting if you are eating. Odds are you are changing your body fat percentage because you're eating healthier. Not because you're eating all of your calories in a 2 hour time frame.

So find non-animal proteins. Kale, nuts, chickpeas, some beans. Are you avoiding dairy, as well? I know you said your goal is to be vegan, so I would assume that's not part of your diet... otherwise I would recommend greek yogurt.
