You don't need to hit your fat goal on keto. Keto just tends to be high fat due to making up for the lack of carbs. As long as you are staying under your carb limit, and hitting your protein goal, you are doing fine. Fat is just extra.

This. 1500 is the absolute minimum for men and since you have a demanding physical job you need a lot more than that. Unless you are under supervision of a doctor, eat more. Set MFP to lose 2lbs a week maximum, input your activity level (which should be high due to your job), and eat the calories it tells you to.

Your observations are correct, but in most cases it's not going to make as big of an impact as in your example. For example, my BMR is around 1400, so about 1 cal/minute. Yes. Follow the calories MFP gives you. Some people only eat back 50-75% of the extra calories though, since MFP can overestimate then. Also, 1200 may be too low of a calorie goal for you. You can find tons of info about that around these forums.
