i'm 5.2 and 115 lbs and level one i was burning 140 or so calories(its about 22 mins) andthen level two i was up QUITE a bit more closer to 170 180 it has a lot more intense cardio

my advice would be to find things you can freeze and maybe pre cook things and freeze just a portion size, i know there are great crock pot recipes out there too you can make in advance freeze and then put in the pot you could do this for a single person for sure . when you upped your calories to 1400 did you hit a week or two where you gained? I know for me 1200 seems to fit really well if i go over i gain easily or so it seems!
