I'm also curious about this. I have my app set to track steps, but it doesn't track my ride onto campus and around campus. I figure since I'm using the step tracker I should add my bike ride as well.

Maybe a little, but I wouldn't be much. Most of your height is determined by your bones, so that's not going to change. The compression on your joints might force you down slightly, but I wouldn't think it would be much more than half an inch or so.

I love food, but in my mind, food is just there to keep me from starving or going silly (I forgot to eat for like three days and I got a bit loopy). I hate cooking so if I can get away with not eating I will. But if I'm GOING to cook, I'm going to cook something I will enjoy eating.

If you are doing a lot of exercise it could be that you are putting on muscle weight (as it sounds like you are). You are losing inches but the scale is staying stable, this indicates that indeed this is what is happening.

There are some sugar free jello pudding snacks that have 60calories. Jello pudding things in general have few calories. I also buy Ice cream snacks that are individually packaged. They are usually around 150 calories, so that's easy to budget.

It might be a flooring issue. I had my scale tell me I was 90lbs (which would be scary for someone of my build) and I got suspicious. Turns out the flooring was uneven and had some low-density areas. Moving it to a more consistent spot helped.
