Technically you are supposed to eat those calories, but personally, I don't always. I just don't see a need to "force feed" myself the extra calories if I'm just not hungry. I read that you can mash cauliflower in your mashed potatoes. I haven't tried that one, but I do like to blend up a can of carrots in the blender and put it in my spaghetti sauce. I have plantar fasciitis and had to stop walking for awhile. I bought some sketchers shape ups and they have made a world of difference because they are very well cushioned on the bottom. But they run small so you have to buy a size larger than you normally wear. Academy Sports carries them for $99.
