  • I love my South Beach cookbooks! Tried a new easy recipe last night which was a big hit. Just cut a tomato in half, put it under the broiler cut side up for about 8-10 minutes. Then add 1 T. of pesto sauce and grill for another couple of minutes. Awesome! I can hardly wait for summer tomatoes to start coming in!
  • We do grilled corn all the time in the summer. If you'll soak the ears in a clean sink full of water for an hour or so, you can eliminate the butter and olive oil before cooking.   • Even the healthy choices at a lot of restaurant can still be much higher in sodium or fat than you're eating at home. Over the years, I've found that food that is very salty or high in fat makes me sick. Chicken salad with extra ranch dressing probably fits both categories.

  • If I'm craving carbs after lunch, I go with string cheese. At the moment I'm back on South Beach for a couple of weeks to banish the carb craving. YMMV but it works for me. I have to "detox" occasionally when I get to a point that I only want pasta, bread, and fruit. One or two weeks on SB gets me back into veggie mode.
